Black Bean and Corn Salsa Recipe:
-3 cans of yellow corn (drained)
-3 cans of black beans (drained and rinsed)
-3 cans of diced tomatoes (drain 1 of the 3)
-2 tbsp red wine vinegar
-1 yellow onion
-1 bunch of cilantro chopped (no stems)
-1/4 cup olive oil
-1/4 cup lime juice
-1 tsp sugar
-salt and pepper to taste
Directions:
-Combine all ingredients in a LARGE bowl (I'm not kidding, this makes a lot!)
-Chill overnight for best flavor.
My Favorite Ways To Eat This:
If you're not making this for a party, you're going to have a lot of salsa on hand. Personally, I love this and put it on almost everything! For breakfast, I'll mix some of the salsa in with my egg whites for a bit of a kick. For lunch, I'll top a salad with it or whip-up some lettuce wraps. You can also add some grilled steak, chicken, or tuna to your lettuce wraps to bulk them up. For dinner, you can use this as a topping on your poultry or beef or eat it as a side. You can incorporate this into far more recipes than the ones I have suggested.
